Flavours with strong acidity, crunchy flavours, not too much sugar, dishes with a taste of land and sea, where the taste buds are taken on a journey of surprising combinations, the right combinations, cooking, balance and juices.

It's a done deal! On Monday 18th March, the Michelin Guide awarded him a star 🌟, thus restoring the Prieuré Baumanière to its former glory.

Thank you to the Michelin Guide for your confidence and for honouring the gastronomy of our chef Christophe Chiavola, who has been awarded a Michelin star 6 months after his arrival!

Christophe Chiavola takes control of the kitchens!

With the arrival of Michelin-starred chef Christophe Chiavola, Le Prieuré Baumanière now opens a new page in its gastronomic history.

Arriving in Provence in 2013 in Saint-Rémy de Provence, Christophe Chiavola was then the chef of Le  Hameau des Baux where he kept the star in the Michelin Guide and then at the Château de Massillan where he won it.  He then decided to take a one-year break from his career behind the stove to work as a consultant in management and creative culinary approach.

For several weeks, Michelin-starred chef Christophe Chiavola has been preparing his arrival as chef de cuisine at Prieuré Baumanière in Villeneuve les Avignon belonging to Jean-André Charial in Les Baux de Provence.

"For me, cooking is a show, theater, customers must be wow! I want to offer a cuisine that looks like me, daring, personal and very refined. Flavors where acidity is marked, crunchy, not too much sugar, dishes on land-sea, where the journey of the taste buds also goes through surprising associations, accuracy in pairings, cooking, balances and juices. The objective is to bring a renewal while keeping the DNA of Baumanière : Provence...

The goal is to go and recover the Michelin star, to resume the work started with incredible potential."
