Ingredients :

For 4 persons

  • 6 ripe yellow tomatoes
  • 3 garlic cloves
  • 2 bunch fresh cilantro
  • 5 cl of olive oil
  • 50 cl of water
  • salt, pepper

Preparation :

Processing

  • wash the potatoes, cut it in dices.
  • peel the garlic, take off the germ.
  • wash the cilantro, chisel it.

Cooking

  • sweat the tomatoes in a pot with the garlic and the cilantro.
  • add 50 cl of water.
  • cook 15 mn at low heat.
  • pass through a sieve
  • keep in cool place.

Presentation

  • rectify the seasoning.
  • set in a soup plate.

Suggestion

serve with a Burrata and a dash of olive oil
